Cheese and Cheese Care
There are a couple of ways:
- Check out your local cheese section. We're available nationwide at many local grocers as well as specialty and independent stores around the country. Find a store near you here.
- Shop our Cheese Collections on Goldbelly and have a Cowgirl delivered to your door. Check out our Seasonal Cheese Club and subscribe to quarterly Cheese Collections.
Our milk is sourced from farmer partners in Northern California.
Yes, all of the cheese we make at Cowgirl Creamery are made with cow’s milk from our farm partners.
Our Goldbelly storefront sells our cow's milk cheeses, as well as other varieties (goat, sheep, etc.) from our fellow producers.
As soon as you get it home, store the unopened cheese in the refrigerator for best quality. Any opened pieces can be re-wrapped in the cheese paper it comes in. Please note, over time, rewrapped cheese may harden or give off a feint ammonia scent. For best quality, enjoy your cheese within a few days of opening.
If you don’t have cheese paper, use something that will keep the cheese covered so that it doesn’t dry out in the fridge. Other customers have used reusable beeswax food cloths and parchment paper. Plastic wrap can be used, but it’s better for harder cheeses than delicate soft cheese.
Mold is a vital part of cheesemaking, developing flavor and texture. It’s what makes that beautiful pale rind on Mt Tam.
Sometimes, mold can appear on the surface after packaging. You may see blooms of white, gray, blue, and green. Those are completely natural - signs of microbial life. The cheese is still delicious after some trimming.
If there’s mold within the cheese, let us know.
All cheeses vary in aromatic intensity. Some, like Mt. Tam, should have a delicate earthy and mushroomy aroma, whereas others, like Red Hawk, have a characteristically robust, funky aroma ranging from pot roast to peanut shells.
Even cheeses with mild aromas can seem extreme when first presented to the room, so we suggest first giving the cheese 5 minutes to "breathe" unwrapped. If at this point, the cheese smells strongly of ammonia (glass cleaner) or bitterness, have a small taste. If the intense aroma has made its way inside to the flavor of the cheese, it won't hurt you or your guests, but is probably past prime and should be disposed in favor of a newer piece.
We have all of Cowgirl Creamery cheese nutrition information either on the packaging or here on our website under Our Cheese.
Most Cowgirl Creamery (Mt Tam, Red Hawk, Devil's Gulch, Pierce Pt, Triple Cream Brie and Heart's Desire) are made with microbial rennet suitable for vegetarians. Our aged pressed cheeses (Hop Along ,Wagon Wheel and Wagon Wheel Reserve) are made with traditional non-vegetarian rennet.
All Cowgirl Creamery cheeses are made with pasteurized milk and/or cream, meaning that it has been heat-treated (before culturing) in accordance with local and federal guidelines.

Our Commitment to Sustainable Operations
For more than 25 years, Cowgirl Creamery has been devoted to making “cheese with heart” — cheese that reflects our values around organic agriculture, responsible land stewardship, and the craft of American artisan cheese. This commitment is rooted in our founders’ mission to celebrate organic practices and spotlight the craftsmanship of sustainable local agriculture in Marin and Sonoma counties.
However, today’s dairy landscape presents real challenges. Organic milk availability and pricing have become increasingly volatile, making it harder for artisan producers to maintain consistent production. Introducing a select line of cheeses made with high‑quality conventional milk allows us to expand accessibility of Cowgirl cheeses while sustaining the long‑term sustainable operation of our creamery.
Absolutely. Organic cheese remains at the heart of our identity. Our signature cheeses — including the beloved Mt Tam — will continue to be made with certified organic, pasture‑based milk sourced from trusted local partners. These relationships reflect our belief in organics as a force for good and a foundation for sustainable agriculture.
We continue to hold ourselves to the highest cheesemaking and food‑safety standards across both organic and conventional products.
Several factors shape the current organic milk landscape for artisan cheesemakers:
- Limited regional supply. Organic milk production in Northern California remains relatively small‑scale compared to demand.
- Rising production costs for farmers. Organic certification, pasture requirements, and high‑quality feed contribute to the rising cost of producing organic milk.
- Shifts in local dairy operations. Changes among small dairies in West Marin and Sonoma — including consolidation and evolving production models — have constrained access to consistent organic supply.
Collectively, these pressures make exclusive reliance on organic milk increasingly difficult.
No. Quality remains our top priority. Whether a cheese is organic or conventional, the milk must meet rigorous standards for freshness, flavor, animal welfare, and environmental responsibility.
This is the same commitment to craftsmanship that helped Cowgirl Creamery become a leader in American artisan cheese.
Producing both organic and conventional cheeses strengthens our long‑term sustainability by:
- Supporting more consistent production cycles.
- Ensuring better utilization of equipment and skilled cheesemaking staff.
- Increasing resilience amid fluctuations in organic milk availability.
- Making our cheeses more accessible while continuing to champion Northern California agriculture.
This balanced approach helps ensure we can protect—and continue producing—our award‑winning organic cheeses for years to come.
Cheeses that are cut and wrapped in a retail store cannot be labeled or sold as organic unless the store itself is certified organic under the USDA National Organic Program.
If a non‑certified store cuts, weighs, wraps, or relabels an organic cheese, it loses its ability to carry the organic designation — even if the cheese was made with certified organic milk in a certified organic creamery.
This is why some of our organic cheeses may appear without organic labeling when sold as cut‑and‑wrap pieces at certain retailers.
Sustainability and support for California agriculture are core to who we are. Our founders opened Cowgirl Creamery to uplift local dairy farmers and celebrate the agricultural identity of Marin and Sonoma counties — a mission that continues guiding us today.
Our ongoing commitments include:
- Championing local dairy agriculture. We continue to work closely with dairy farmers producing high‑quality milk, reflecting our belief that great cheese begins with healthy soil and “happy cows.”
- Preserving regional food heritage. Cowgirl Creamery has long celebrated the coastal terroir of Marin and Sonoma. We remain committed to strengthening this local food ecosystem.
- Creating stable demand for California farmers. Sustaining and expanding our production — including a thoughtful mix of organic and conventional cheeses — helps ensure consistent, reliable demand for local dairy partners. This supports the long‑term viability of California’s small and mid‑scale dairy farms.
- Supporting the artisan food community. From our early days operating Tomales Bay Foods to our present‑day work, we continue uplifting regional producers and sustaining the vibrant food culture our founders helped build.
Ultimately, offering both organic and conventional cheeses helps us remain resilient while protecting the future of the classic creations that define Cowgirl Creamery.
Cowgirl Creamery’s organic cheeses are produced in a QAI‑certified (Quality Assurance International) organic creamery. QAI is one of the leading USDA‑accredited organic certifiers, and their certification ensures that:
- Our creamery follows strict USDA National Organic Program (NOP) standards.
- Every step of organic production — from milk sourcing to cheesemaking to packaging — is audited and verified.
- Ingredients, sanitation practices, equipment handling, and recordkeeping all meet rigorous organic compliance requirements.
- Our organic products, including Mt Tam, are guaranteed to be made with certified organic milk from dairies that follow verified organic practices.
This third‑party certification reinforces our long‑standing commitment to transparency, traceability, and integrity in organic cheesemaking.
