After creating Alemar Cheese Company in Minnesota, Keith Adams was eager for not only a new challenge, but a location closer to his native California. Having lived in England for several years, he became enamored of the sustainable, pasture-focused dairies that are prevalent there, and soon settled on British cheese as a focus for his new enterprise, Wm. Cofield Cheesemakers. To learn the craft of British cheesemaking, he spent time at both the Stichelton Dairy north of London, and the Westcombe Dairy, a cheddar maker in Somerset County.

McKinley Cheddar is made from raw organic Jersey milk from Sonoma County and, like a traditional cheddar, is wrapped in cloth. It ages for up to 7 months, and offers a mild profile that is low in acidity with a dense, chewy, toothsome texture.
