Mt Tam Tartine with Radishes & Herb Salad

Cheese and salad: a time-tested combination. Lighten up our indulgent triple cream Mt Tam with this easy herb & radish salad atop nutty, whole-grain toast. Here, we opt for parsley, micro-arugula, and sunflower sprouts for the greenery, but you could easily substitute cilantro or dill along with your favorite spicy greens. Dress lightly with 3:1 oil to vinegar, top with a few wedges of Mt Tam, and say goodbye to avocado toast. 

Ingredients

1 tablespoon olive oil
1 teaspoons champagne vinegar or lemon juice
2 tablespoons flat-leaf parsley, torn
3-4 red radishes, sliced thinly
3-4 tablespoons microgreens or small handful of arugula
3-4 tablespoons of sprouts
2 slices walnut levain bread (or any whole grain sourdough)
4 oz (1/2 wheel) Cowgirl Creamery Mt Tam 
Flakey salt and pepper to finish

Directions

  1. Toast the levain bread.
  2. Combine radishes, herbs, greens and sprouts in small mixing bowl, and dress with oil and vinegar (or lemon juice).
  3. Top each toast with half of the salad mixture, and season generously with flakey salt and pepper.
  4. Slice the Mt Tam into ~1oz wedges or discs, and top toasts.

    Followed same recipe substituting “Devil’s Gulch” for “Mt. Tam”. Excellent!
