Compelled by a deep desire to slow down from the frantic pace of corporate life, brothers-in-law Tim Welsh and Pat Ford decided to join forces in 2005 and create Beehive Cheese. Their unique creations are made from pasteurized Jersey cow milk supplied by local dairies that do not use hormones, antibiotics or chemical fertilizers.
Trufflehive, the newest addition to Beehive's line, starts an Irish-style cheddar made from cow’s milk sourced from a local family-owned farm about 10 miles from the creamery. The cheesemakers then take it a few steps further by rubbing black truffle carpaccio, honey and truffle salt on the rind. After 6 months in the aging room, the striking outcome is a dense yet creamy paste with savory earthy aromas accompanied by flavors of truffle and mushroom.
