Because of the consistently warm climate, the Wehners are able to graze their cows rotationally year-round, and work to uphold the highest levels of humane animal husbandry. Down the road at the creamery, the Wehners' daughter and son-in-law, Jessica and Jeremy, convert this milk into an array of old world-style cheeses that showcase the true flavors of the grass-based milk.
With its mottled natural rind, Thomasville Tomme is styled after a French farmhouse cheese. It offers flavors of cultured butter and grass, with underpinnings of cream and earth. This firm, versatile cheese pairs well with dried fruit and nuts, and is also the perfect addition to a salami sandwich.
