The Marin French Cheese Company has been making cheese at its ranch just outside of Petaluma since 1865, and is known as the oldest continually operating creamery in the U.S. Originally known for its mild “breakfast cheese,” which is still produced today, the company now makes a range of classic French-style cheeses using Jersey, Holstein and Guernsey milk from neighboring family farms, and traditional cheesemaking practices.

Washed in brine to develop its sticky, orange rind, Schloss (meaning "castle" in German) has a savory full-flavored taste and a distinct meaty character that is tempered by the extra cream added to the paste. The cheese has a slightly fruity tang at the finish that makes it a winning match for a cider or a funky sour beer.
