Joel and Carleen Weirauch began raising dairy sheep more than 10 years ago and, today, keep their humane-certified flock on a organic ranch in Petaluma, California. Joel, who studied cheesemaking in France, uses both the flock's seasonal milk supply along with organic cow's milk from a local farm to make several cheeses. Their creamery is constructed out of two portable classroom trailers, and the couple employs a variety of sustainable practices, including rotational pasture management, water reuse and solar power.
Saint Rose is a raw, farmstead sheep's milk cheese with a natural rind. Named for the city of Santa Rosa, where Joel and Carleen grew up, the cheese offers complex, but balanced flavors of nuts and grass, and allows the high quality of the farm's milk to shine through.
