Compelled by a deep desire to slow down from the frantic pace of corporate life, brothers-in-law Tim Welsh and Pat Ford decided to join forces in 2005 and create Beehive Cheese. Their unique creations are made from pasteurized Jersey cow milk supplied by local dairies that do not use hormones, antibiotics or chemical fertilizers.
The newest addtion to Beehive's collection, Hatch Chile Promontory has New Mexican Hatch chiles mixed into the paste for a mildly spicy, grassy flavor that brings out the floral and savory undertone in the buttery, cheddar-style cheese. This cheese pairs with pale lagers, sweet white wines or a square of dark chocolate.
