Pecorino Gessato

Fattoria Lischeto is a family run farm in Tuscany situated on 150 hectares of land. It enjoys spectacular panoramic views of gently rolling hills and the calanchi -- natural erosion phenomena of ancient origin. The farm, which offers agrotourism stays and operates off of renewable energy, keeps up to 1000 sheep, and uses the flock's milk to produce raw milk cheeses.

Gessato, a lovely organic, farmstead cheese, has a smooth paste that is creamy and milky. It offers mild flavors of onion and citrus, and is reminscent of wheat pasta and walnuts closer to the rind.
