Josep Cuixart opened his cheesemaking company in the early 1980s with a small herd of goats. Over the years, his business has grown, and today he makes an array of cheeses at his facility outside of Barcelona, Spain.
Cuixart created the sheep's milk cheese Ombra in the early 1990s. Aged a minimum of four months, the wheels develop a beautiful natural rind. The firm paste is occasionally studded with protein crystals, and offers flavors of grass and nuts with a balance of sheep's milk tanginess. Older wheels can offer a deeper sweetness that is reminiscent of butterscotch.
