Sergio Moro is carrying on the family business founded by his grandfather, Luigi, who began a milk cooperative in 1930 in the Veneto region of Italy to help local farmers. Today, Sergio crafts an array of unique cow’s milk cheeses that reflect the region’s terroir.

Noce is a small, aged cow's milk cheese that is wrapped in locally foraged walnut leaves. The cheeses are then ripened in oak barrels, sealing in the woodsy, nutty aroma. The paste is sweet and lactic towards the center of the wheel, with a stronger flavor of walnuts just under the rind.
