Merry Goat Spruce

Nestled in the quiet mountains of western Maryland, Firefly Farms Creamery is mastering the art of making award-winning goat cheeses. Founded in 2002 by partners Mike Koch and Pablo Solanet, the farms works hard to stay true to their mission of sustainability, quality and tradition. Firefly works exclusively with local family owned farms to source fresh raw goat milk that is free of additives, preservatives and stabilizers. All of their cheeses are scooped, turned, salted, washed, brushed and wrapped by hand.

In the fall of 2017, the cheesemakers at Firefly were looking for a new way to age their renowned Merry Goat Round. In collaboration with chef Jose Andres, they decided to wrap the wheel with spruce bark to better support the wheel as it aged. Necessity turned to art after they realized that the spruce imparted a rich woodiness to the flavor of the cheese. This cheese went on to win a Good Food Award in 2018 and a perfect score at the American Cheese Society Judging and Competition in the same year. The paste, with a silky, fudgy texture, is rich with notes of mushroom and umami. Cut open the top of the cheese, flip it over like a lid, and scoop away!
