Inverness is a small, surface-ripened barrel with a tangy, lactic curd and a dense, creamy mouthfeel. This cheese -- our version of a St. Marcellin -- is made with organic Holstein milk from John and Karen Taylor's Bivalve Dairy, which is set with traditional rennet, then aged for two weeks.
