A California native, Sarah Marcus worked in radio broadcasting and the music industry before discovering what she calls her “ultimate love,” cheesemaking. After working behind the counter at Cowgirl Creamery’s Ferry Building shop and apprenticing as a cheesemaker in our Point Reyes creamery, Sarah honed her skills at goat dairies in Great Britain and North Carolina. She launched Briar Rose Creamery with her husband, Jim, in 2010.

Honnalee is a washed rind cheese made with organic cow’s milk from Perrin Family Farms and Abiqua Acres, two family-owned dairies in Oregon. Made from a combination of Ayrshire and Guernsey milk, the discs spend about 3 months in the aging room where they are washed several times with a salt water brine. The result is a semi-firm cheese that is enveloped in a gorgeous pink and orange-hued rind. Aromatic notes of beef broth and warm cream matched with distinct flavors of brown butter and popcorn create a very savory tasting experience.
