The cheeses at Georgia's Sweet Grass Dairy begin with cow's milk from a nearby farm, owned by Al and Desiree Wehner. Because of the consistently warm climate, the Wehners are able to graze their cows rotationally year-round, and work to uphold the highest levels of humane animal husbandry. Down the road at the creamery, the Wehners' daughter and son-in-law, Jessica and Jeremy, convert this milk into an array of old world-style cheeses that showcase the true flavors of the grass-based milk.
Green Hill is a bloomy-rinded cheese, reminsicent of a Camembert, that has a soft-butter texture when young and an oozy texture when ripe. It offers flavors of grass, white buttom mushroom, cream and a bit of savory umami on the finish.
