Grady's Wheel, a seasonal cheese, is made from a blend of organic cow's milk from Pete and Becky Lepori's family dairy, and water buffalo milk from Double 8 Dairy, both in Valley Ford. It wears a natural rind, and its firm paste offers flavors of creme fraiche and melted butter with a savory umami finish.
