Cheddar, Trivium

Creamery 333 is the creation of three friends, all well-known faces in the cheese world -- French affineur Hervé Mons, cheesemaker Arnaud Solandt and distributor François Kerautret. The three have combined their vast experience and knowledge to create a new world creamery rooted in old world tradition. Trivium is Creamery 333's first offering, named for a Latin word for a place where three roads meet.

Trivium is a natural rinded, goat’s milk cheddar made in Wisconsin, and then sent to Crown Finish Caves, an affinage facility in Brooklyn, where it is aged for a minimum of 4 months. The cheese has a semi-firm texture and a rich mouthfeel. Like a classic cheddar, it offers bright flavors of citrus, which are underscored by a sweet, caramel finish that is characteristic of aged goat's milk.
