Cave Aged Chandoka

Standard Market, an upscale grocer in suburban Chicago, has built its shop-based cheese affinage program wheel by wheel, first working with Wisconsin's LaClare Farms on an aged version of their popular goat milk gouda, Evalon. Pleased with the success of that collaboration, the farm and the shop joined forces to create a bandaged-wrapped version of LaClare's goat-cow milk cheddar, Chandoka. 

The young Chandoka arrives to Standard Market when it is just two days old. The wheels are then bound in cloth and loaded on to cedar boards to age for approximately 7-9 months. As it ages, the cheese develops a dense, fudgy paste, an earthy aroma, and flavors of horseradish and bouillon, with undertones of cream and yogurt.
