Butter, Straus

Born in Europe, Bill and Ellen Straus settled in Marshall, California, in the early 1940s and opened their family dairy with 23 Jersey cows. Today, the Straus Family Farm, run by Bill and Ellen's son, Albert, is home to nearly 600 cows and comprises more than 600 acres. Straus became the first certified organic dairy west of the Mississippi, and their creamery, which opened in 1994, was the first 100% certified organic creamery in the U.S. In addition to making its own dairy products, Straus also supplies milk for several of Cowgirl Creamery's cheeses.

Straus organic unsalted butter is rich, sweet and creamy with 85% butterfat content and extremely low moisture levels, which help ensure that it doesn't burn. Straus makes this butter in small batches in a churn dating to the 1950s.
