Located in converted brewery tunnels beneath the bustling urban landscape of Crown Heights, Brooklyn, Crown Finish Caves is a facility dedicated to affinage. Rather than make cheese, Crown Finish receives young, often rindless cheeses from artisan producers in both the U.S. and Europe, and cares for them until they are ready to be sold. The tunnels maintain a year-round temperature of about 50 degrees, which is ideal for cheese maturation.

Barnburner, a collaboration with Grafton Village Cheese in Vermont, is a beautiful raw cow’s milk cheddar. The milk for this cheese is sourced from herds of Jersey cows managed by Amish farmers in New York. The milk is dyed with annatto, which gives the cheese a stunning burnt orange hue, and the blocks are cold smoked for two hours. Once at Crown Finish, the blocks are wrapped in lard and cloth, and then aged for 4 months. The result is a dense, toothsome cheese with subtle hickory notes.
