Based in County Cork, Ireland, the Burns family have been dairy farmers since 1925, when Eugene Burns established a herd of pedigree Friesian cows. A generation later, in 1983, Eugene's son, also named Eugene, and his wife Mary began making cheese. Today, the business is run by Mary and their children.

Washed rind cheeses are particularly well-suited to County Cork because of its climate: mild and damp, with the Atlantic spray seasoning the air with a salty tang. Hence, the Burns' cheese Ardrahan, a pungent, earthy wheel with a soft, sticky paste. But despite the strong aroma, the paste offers milder flavors of cream and yeast with a balanced saltiness.
