Queijos Tavares is located in the Serra de Estrela, the highest point in Portugal. The landscape is marked by mountains, wide horizons, lagoons, fertile land and steep slopes. The diversified fauna and colorful flora enlighten the landscape and make it unique. The sheep and goats pasture freely and are not given additional feed, with shepherds carefully choosing pasture each day to fit the herd's needs.

Alva is made from the milk of the Murciana goat, a rugged breed known for producing a sweet milk rich in butterfat. During production, the curds are washed of lactose, similar to Goudas, a process that yields even more sweetness. Aged for about 30 days, Alva offers aromas of sour cream and cottage cheese, and flavors of sweet butter without any goaty tang.
