Alp Blossom

Sennerei Huban was founded in 1901 as a cooperative and the first cheese school in Austria. The dairy works with 34 herds, each with an average of about 15 Brown Swiss cows. All of the farms are located within 5 kilometers of the coop and fed on pasture or hay year round. The dairy was rebuilt in 2009, and currently processes about 800 kilograms of cheese per day, including their signature Hubaner, a firm wheel with a washed rind.

Alp Blossom celebrates the diversity of the Alpine flora throughout the "Hay Belt," an area that spans Eastern Switzerland, Southern Germany and Western Austria. It begins as Hubaner and, at four months, is covered in a combination of dried edible flowers and herbs from the surrounding Alpine meadows. The result is a stunningly beautiful cheese with an herbaceous aroma, flavors of cream and nuts and a bit of mild funk on the finish.
