Finca Fuentillezjos, owned by Concha and Matteo Garcia, has been producing cheese for ten years and was the first farm in Spain to produce certified organic Manchego. The farm is home to approximately 2,000 Manchega sheep that graze the plains of La Mancha.
With its firm, smooth paste and its basket-printed rind, Albala Tierno is best described as a young Manchego-style cheese. Meant as a distillation of the land where the sheep graze, it offers aromas of flowers and herbs, and a mild flavor with the faintest hints of rosemary and lavender.
This organic cheese is brought to the United States by Pondini, an importer specializing in organic cheeses. Pondini has worked with Finca Fuentillezjos since 2009.
