Tired of staring at a skyline that seemed more smog-yellow than clear blue, Barbara and Rex Backus yearned to breathe free, so in 1972, they packed themselves out of Los Angeles and moved to Northern California where dark and starry skies jockey for attention over green hills and rocky mounts. Barbara's love for all things Japanese is reflected in the names they have given their does for over thirty years and the cheeses frequently inherit the names.

Plump and nearly busting through its thin rind of velvety white mold, Dafne is an elegant goat cheese that is aged about six weeks. Herbaceous and only gently goaty, the cheese is creamy and subtle with a refreshing tang.
