When local author Janet Fletcher wrote an article in the San Francisco Chronicle naming ten iconic California cheeses, we were inspired to create a collection featuring three of them. It includes: our own RED HAWK (10oz); Cypress Grove's classic mold-ripened goat cheese, HUMBOLDT FOG (16oz); and Ig Vella's traditional DRY JACK (12oz) rubbed with olive oil, pepper and chocolate, and aged for six months.
