Thanksgiving Cheese
Goat Gouda
from Central Coast Creamery
Cheesemaker, Reggie Jones, began his career in large cheese factories, managing processing,
product development and quality control. Yet, he always dreamed of being able to develop
full-flavored, small production cheeses. With his technical knowledge of cheesemaking and
his wish to make cheese by hand, he began working with the John Dirk Bulk at Oakdale Cheese
near Manteca, California, to develop a Gouda cheese made with goat milk.
His long-term plan is to build his own small creamery
in the countryside west of Paso Robles, but for now he is happy to work at the Bulk's facility.
This rare gouda is made from 100% goat milk sourced from a neighboring farm.
An additional touch of goat cream is added to the milk to enhance the slightly nutty, sweet flavors.
Aged a minimum of five months, the resulting cheese has an opaque color with a hard, thin, natural rind.

Be a hit
at Thanksgiving!
Bring a large selection of artisan cheeses to the Thanksgiving feast,
of course. This is the cowgirls' favorite holiday because we allow ourselves to pause for a moment to celebrate
the harvest and to thank the farmers for the abundance on our table. We would also like to raise a toast to the
cows that gave their milk for our cheese and the rolling pastures that give nourishment to the cows. Salute!
This holiday season at Cowgirl Creamery, we will be slowly rolling out our new cheese, WAGON WHEEL, at our own
stores and through mail order (call for custom orders). We are making only ten 25 pound wheels per week, but eight new cheese molds have
been ordered and when they arrive in early Spring, we will able to increase production to eighteen wheels per week.
Our new holiday cheese catalogs are in our Cowgirl Creamery stores and will be mailed out early this month. This
year, we have added a few collections and a new cheese club, all beautifully photographed by Wil Edwards of Culture
Magazine. Available in our shops or online.
