Luck of the Irish

It's said that on St. Patrick's Day, we're all Irish. And so we celebrate! This month's IRISH - INSPIRATION COLLECTION heralds the return of spring and our seasonal ST PAT, a whole milk cheese wrapped (by leprechauns) with nettles. To the collection, that will be available the week of St. Patrick's Day, we've added the sharp and buttery Cabot Creamery's CABOT CLOTHBOUND CHEDDAR, and the meaty aged LINCOLNSHIRE POACHER. As for what to drink, it's no secret that cheddars go with beer. But why limit it to cheddars? May be suggest you try an amber, brown ale or porter with the smooth, creamy CABOT. For the LINCOLNSHIRE, a sharper cheddar, try a robust ale or a sweet barleywine or even one of our local IPAs. As for our own ST PAT, it pairs well with ALL beers, but we suggest you do as our Gaelic friends would and raise a glass of Guinness. As they say in Ireland: May your home always be too small to hold all your friends. Happy St. Patty's Day!

Cheese Heals! Did you hear that Olympic Gold Medalist, Lindsey Vonn, wrapped thick slices of Austrian mountain cheese around her leg to accelerate the healing of her bruised shin - a home remedy that is said to help reduce swelling and promote the healing process? The theory is that  high acid cheese can have anti-inflammatory properties. Perhaps we should all keep a wheel of cheddar in the first aid kit!
