Estate bottled wine
is treasured because unique flavors emerge that are specific to the
place and to the variety of grape used in the wine.
The same distinctions
are true for milk, so the cheesemakers at Cowgirl Creamery have been
on the lookout for local Jersey milk to use in our seasonal cheeses.
This year, we were introduced to John Taverna who operates a small
Jersey dairy, just 5 miles from our First Street Creamery in
Petaluma. We started buying milk from John a few months ago, right
after he completed his organic certification.
John calls himself a
"simple man with a simple life and a simple dream." He farms in the
idyllic Chileno Valley, milking 150 Jersey cows on 470 acres, and
producing 500 gallons of certified organic milk a day. A fourth
generation dairy farmer, his family immigrated over 100 years ago
from Switzerland and Italy. John, who "loves farming and my
animals", feeds mainly whole plants, basing his rations on pasture
January through June, and hay during the dry season, supplementing
with grain only in the milking parlor. The result is a high quality,
full fat, delicious milk which is perfect for Cowgirl Creamery's ST
PAT, PIERCE PT, Fromage Blanc and Inverness.
Bringing home the prize
Hooray for John's milk and the Cowgirl Creamery¹s cheesemakers. In
July, two of our cheeses won awards at the 2009 North American
Jersey Cheese Competition; a gold medal for our seasonal ST PAT and a
silver for our Inverness.

Milk to
Cheese Tour
Collect a fun bunch of friends/family/co-workers and book a "Milk to
Cheese Tour" in Petaluma. The day begins with a tour of our First
Street Creamery where we will watch the cheesemakers at work, taste
cheese at three stages of aging and hear the Cowgirl Creamery story.
Then we will caravan to Deer Valley Dairy, one of Straus Family
Creamery's organic milk suppliers. At the dairy, Kathy Tresch will
lead us on a walk across her wildflower-studded pastures, settling
in the apple orchard for a nice little lunch prepared by Cowgirl

Westcombe Red featured in our
Green Pastures Collection
After
chatting with a British food writer about the virtues of farmhouse
Red Leicester, the cheesemakers at Westcombe Farm in Somerset,
England decided to take it upon themselves to revive the nearly
extinct cheese and another endangered traditional was cheese saved!
Its
signature bright orange, naturally dyed using annatto seed, Westcombe Red coats
your tongue with a smooth, promising silkiness. Slightly fruity with
an elusive and gentle sharpness, the clothbound cheese is produced
from Westcombe Farm's Friesian herd.
