The high-energy goats are allowed to cavort freely in the fresh air, drink clear mountain water, and sup on shrubs and alfalfa that grow lushly in the rich volcanic soil.
With a washed rind that glows with warm sunset hues, this aged goat cheese is aged on pine planks in Juniper Grove's own cellars and named for a village east of the dramatic Cascade Mountain range. Tumalo Tomme is a mountain-style cheese with delicate eyes and an honest goaty flavor that calls to mind the rich, volcanic pastures of Central Oregon.
