Ricotta, Keswick Creamery

Keswick Creamery is a family farm in south-central Pennsylvania. The name "Keswick" is an old English term for a farm where cheese is made. Susan and Bill Dietrich bought the 100 acre farm in 1978 and began milking 45 jersey cows. After graduating from Virginia Tech Dairy Science program, daughter Melanie Cochran returned to the farm in 1981 and started the cheesemaking. The family recognized that this was a way to keep the farm viable while saving it from becoming another housing development. Melanie helped establish the Pennsylvania Cheese Alliance and is recognized as a strong advocate for small family farms and sustainable agriculture practices.

Made with Jersey cow milk, this ricotta has a mild, lactic flavor with a creamy finish.
