Tumalo Farms, the brainchild of Flavio DeCastilhos and his wife, was founded in 2004 when Flavio left his post as one of the founders of a leading online medical program. He sought out a serene location to raise his family and struck gold when he purchased 84 acres of raw land near Bend, Oregon. After cultivating the land for over a year and introducing power and water, Flavio purchased 180 goats to start his new found dream of cheesemaking, and began using traditional Dutch and Italian methods to produce unique goat cheeses. The herd has since grown to over 700 goats (French Alpine and Saanen breeds), making it the largest herd in the Pacific Northwest. Because the farm is situated about 3,500 feet above sea level, the Tumalo goats frolic in clean alpine air and revel in the three hundred days of sunshine that saturate the area every year.

Pondhopper is a unique goat's milk cheese made with local beer, which offers flavors of yeast and notes of spicy, herbal hops. The cheese's top notes are pleasantly balanced by the earthy sweetness of the goat's milk.
