Quite possibly the only dairy that started because of a dog, Everona Dairy is based in Rapidan, Virginia. Fifteen years ago Dr. Pat Elliott, a family physician, adopted a Border Collie and then got a few sheep to keep the puppy company. It occurred to her that people milk sheep, and in doing her research on that topic, Dr. Elliott learned that sheep's milk cheese is considered some of the best in the world. Today, Everona has over one hundred sheep giving their milk to make delicious Northern Virginia cheese.
Everona Piedmont cheese is a semi-hard cheese that is aged for two to six months. A tangy, nutty cheese with sweet floral accents, Everona Piedmont also has earthy tang that reflects the pastureland of Northern Virginia.
