Take a drive through the lush and rolling hills of southern Indiana where the winters are hard and the accents are sweet and soft.  Just before Route 150 crosses the Ohio River to Louisville, you'll find the Schad family at Capriole Dairy.  The Schads were pioneers in the artisan cheese movement and continue to make some of the best goat cheeses in America. 

In a bit of serendipity, when Judy Schad and her husband Larry bought their farm in 1976, they discovered that, in the 1800s, it had belonged to Larry's great-great-grandfather. To honor family tradition, they decided to build a new log cabin right over the foundation of the old house. They tried their hand at raising all manner of barn animals, and soon fell in love with the affectionate, independent and mischievous habits of their small flock of milking goats.

Until recently, they managed a healthy herd of four hundred Alpine, Saanen, and Nubian goats and it is these goats that have provided milk for their nationally known line of handmade Capriole goat cheeses. Recently, Judy and Larry sold the herd to a neighboring farm to focus entirely on the cheesemaking side of the business.

O'Banon is a domestic play on the French chevre that this cheese is based on. These hand-ladled rounds of goat's milk are wrapped in chestnut leaves that have been soaked in bourbon. The tannins in the leaves and the bourbon combine to give this creamy, dense cheese a unique flavor that leaves a crisp bite on the palate. The paste is firm with a smooth texture. As they age, these award-winning cheeses become a bit drier and intensify in flavor.
