Crafted in the Emilia Romagna region of Italy between the Appenine Mountains and the River Po, Nuvola di Pecora, is formed in a stunning square the color of ivory, interspersed with striking streaks of yellow mold. The name Nuvelo di Pecara literally translates to "sheep clouds", perhaps in reference to its soft, billowy texture. This semi-soft cheese is aged for about thirty days, giving it just enough time to form a thin, bloomy rind.
This delectable cheese is fairly mild and softer than most of its sheep's milk counterparts in the marketplace. The wheel develops a somewhat yeasty quality that suggests toast topped with perfectly cooked poached eggs with a finish of that classic sheep milk tang.
