Josep Cuixart, the same cheesemaker who created Sara's Nevat, makes this semi-firm goat cheese in Catalonia. The cheese is first washed with vegetable oil and charcoal and then allowed to age for two to three months. Cuixart draws his milk from Murciana goats, which makes the cheese protein-rich and high in butterfat and gives it a creamy texture. The flavor of Montacabrer is sweet and earthy with a tangy zing at the finish.
