Josep Cuixart opened his cheesemaking company in the early 1980s with a small herd of goats. Over the years, his business has grown, and today he makes an array of cheeses at his facility outside of Barcelona, Spain.

Montcabrer is a semi-firm goat cheese that is coated with vegetable oil and charcoal and then allowed to age for two to three months. Cuixart uses the milk of Murciana goats, which makes the cheese protein-rich and high in butterfat and gives it a creamy texture. Montcabrer has a sweet earthiness and a tangy zing at the finish.
