Mont St. Francis

Take a ride through the lush and rolling hills of southern Indiana where the winters are hard and the accents grow soft and you'll stumble upon Capriole Dairy and their wonderful world of goat cheese.

In a bit of serendipity, when Judy Schad and her husband Larry bought their current property in 1976, they discovered that in the 1800s the property had belonged to Larry's great-great-grandfather. To honor family tradition, they decided to build their new log cabin right over the foundation of the old house. First populating their family farm with all manner of animals, they soon fell in love with how affectionate, independent, and mischievous their goats were. They now have a happy herd of four hundred Alpine, Saanen, and Nubian goats and it is these goats that give the milk for the fabulous Capriole goat cheeses.

Mont St. Francis has a glowing ruby red washed rind and is named for a local monastery.  Rich, beefy, and deliciously aromatic, this cheese was one of the first great washed rinds in America.
