Cheesemaker Patricia Morford fulfilled a long-held dream when she started making cheese with the milk from her small goat herd. Pat grew up with goats and brought knowledge and experience as she established the milking herd. The quality of the herd's milk comes through in all of her cheeses. Patricia uses veal rennet to produce her cheeses, giving her the precise results that she desires.
Reminiscent of French farmhouse cheese and made in one pound squares, the Mayor of Nye Beach is washed with a local ale before aging for a minimum of two months. It has a big, pungent flavor with a bit of sweetness.
