Tom and Nancy Clark began the Old Chatham Sheepherding Company in 1993 with 150 ewes, and their flock has since grown to encompass more than 1,000. The happy and woolly sheep meander through the lush green hills of New York’s upper Hudson River Valley, munching on organic pasture and feed. They are raised without the use of hormones or antibiotics. This high level of care results in high-quality milk that is transformed into some of the best sheep dairy products in the country.
Named for a body of water that flows near the farm, Kinderhook Creek is a small, soft round made entirely of sheep’s milk, a rare find. It has a bloomy white rind and a rich paste that becomes softer – even slightly runny – as it matures. It is mild in flavor when young, and gradually begins to show deeper flavors of mushrooms and nuts.
