Compelled by a deep desire to slow down from the frantic pace of corporate life, brothers-in-law Tim Welsh and Pat Ford decided to join forces in 2005 and create Beehive Cheese. Their interest in preserving artisanal methods of cheesemaking has resulted in several fine cheeses. Beehive uses pasteurized Jersey-Holstein cows’ milk supplied by a local dairy that does not use growth hormones or chemical fertilizers.

Ipanema is a firm, mild cheddar rubbed with cultured butter and cocoa beans that are sourced and roasted by Crio Bru in nearby Lindon, Utah. With its tan rind, the cheese is named for the samba classic “The Girl from Ipanema,” one of Welsh’s favorite songs. It has mild flavors of chocolate and strawberries, and pairs well with a handful of roasted nuts, a dark, malty ale, or even a small sip of bourbon.
