Inverness

Inverness is a newcomer to Cowgirl Creamery's offerings. The small, cylindrical cheese is surface-ripened with a tangy, lactic curd and a dense, creamy mouthfeel. This cheese is made with organic cow's milk from John Taverna's Chileno Valley Jersey Dairy, set with traditional rennet, then aged for two weeks. Inverness won a silver medal at the 2009 North American Jersey Cheese Competition, and third place in the soft-ripened cheese category at the 2010 American Cheese Society competition.

All Cowgirl Creamery-produced cheeses are Marin Organic Certified Agricultural Products.
