Gabietou hails from the steep pastures of the Western Pyrenees where cows and sheep alike graze on alpine grass, wild herbs, and flowers. Gabietou is an original creation from Gabriel Bachelet, a renown cheesemaker in the Pyrenean town of Pau. Bachelet swirls both cow and sheep milk together to make this supple and rich cheese. Bachelet gently washes the cheese's exterior with a brine made from rock salt from local warm springs, which gives the rind a copper glow.
Gabietou covers your tongue with a undertones of tropical fruit that is underscored by a deep earthiness.
