Ewe's Blue

Tom and Nancy Clark began the Old Chatham Sheepherding Company in 1993 with 150 ewes, and their flock has since grown to encompass more than 1,000. The happy and woolly sheep meander through the lush green hills of New York’s upper Hudson River Valley, munching on organic pasture and feed. They are raised without the use of hormones or antibiotics. This high level of care results in high-quality milk that is transformed into some of the best sheep dairy products in the country.

Ewe's Blue is a rare, domestic blue cheese made of pure sheep's milk, similar to the famed Roquefort of France. It is creamy and rich with a prominent, but not overwhelming, tangy blue flavor.
