Tumalo Farms, the brainchild of Flavio DeCastilhos and his wife, began in 2004 when Flavio left his post as one of the founders of a leading online medical program. He sought out a serene location to raise his family and struck gold when he purchased eighty-four acres of raw land near Bend, Oregon. After cultivating the land for over a year, and introducing power and water, Flavio purchased 180 goats to start his new found dream of cheesemaking. The herd is now made up of over 700 goats (French Alpine and Santa breeds), making it the largest herd in the Pacific Northwest.
Nutty and sharp, Classico is an excellent example of a tangy goat milk gouda-style cheese.
