Cheddar, Shelburne Farms

Cheddar is the only cheese made at Shelburne Farms on Lake Champlain in Vermont. It’s made from raw, unhomogenized milk from the farm’s herd of Brown Swiss cows, which are grazed on grass and clover. It is available in one-pound, wax-coated blocks, as well as in unwaxed, 10-pound blocks, which have been aged two years. Shelburne Cheddar was awarded a 3rd place ribbon at the American Cheese Society 2005 in Louisville, KY.
