Cheddar, Shelburne Farms

Cheddar is the only cheese made at Shelburne Farms on Lake Champlain in Vermont. It’s made from raw, unhomogenized milk from the farm’s herd of Brown Swiss cows, which graze on grass and clover. It is available in one-pound, wax-coated blocks, and also in unwaxed, 10-pound blocks.
