One of Sonoma County's newest artisanal creameries, Bohemian Creamery is the creation of Lisa Gottreich and Miriam Block, who met at a dinner party in 2008 at a crossroads in their lives and together were inspired to change things up. Lisa was working as an operations analyst at an oncology group and Miriam was in software. Now they have seven acres, a creamery, and a few dozen Saanen and Alpine goats in Sebastopol and are making Italian-style cheeses with their own goat milk and Jersey cow milk from a neighboring dairy.
This Asiago-style washed-rind cheese is made from the milk of their own goats and then aged for six to eight weeks. Washing the rind at the beginning of the aging process promotes a moist and slightly sweet paste.
