Birgit Halbreiter and Robert Poland met while working for the tasty and Colorado-based brewery, New Belgium Brewing Company. A few years later, they enlisted the help of Birgit's father, a master cheesemaker in Germany, and started making cheese at home. The home cheesemaking went swimmingly and in 2000, MouCo Cheese Company was founded in Fort Collins, Colorado.
The first cheese that MouCo started making, this hand-made Camembert starts when the milk has barely cooled from the cow's body heat. When just a youngster, MouCo Camembert is mild and soft but ages to a strong, complex nuttiness.
