Since 1968, when her parents founded their goat dairy farm in Sonoma County, California Jennifer Bice has been intimately involved in raising and milking goats, and making in turn, Certified Humane goat cheese. Located in warm and verdant Sebastopol, Jennifer's Redwood Hill herds of Nubian, Alpine, Saanen, and LaMancha goats clamber around green pastures when the weather is fine but are kept snugly inside when the winds and rains buck up.
Named for one of Redwood Hill's adored goats, Camellia is made with goat milk in the style of a traditional French Camembert. A thin, cashmere-soft layer of penicillum candidum encases a dense and creamy paste. Aromas of butter and fresh cream precede each bite and compliments the mushroom and earthy essences prevalent in the paste. Beautiful in its simplicity, Camellia is a cheese that has and continues to stand the tests of time in the artisanal cheese world.
