Inspired by friends that make regular unplanned trips on their bicycles to various parts of the globe where all sorts of adventures happen, Alan Glustoff wanted to create cheese that allowed that same sort of freedom of possibilities influenced by the variation and imprint of the fluctuations of milk, grasses and the season. Alan, who has a degree in food science from the University of Illinois and has worked in research at several major food corporations, used to travel twice a month to Amish country in Pennsylvania to make his cheese, but has now opened his own farm and creamery in Westchester County in New York.
Browning Gold, a raw cow milk farmstead cheese, has a firm texture. Made with organic milk from Holstein cows and then aged for 24 months, this cheese is buttery with the long mouth-filling flavors that come with raw milk cheeses. It's creamy, with a touch of sweetness.
