Welcome winter with a wheel of seductively rich RUSH CREEK RESERVE plus a four-ounce jar of figs and black tea preserves. Inspired by Vacherin Mont d'Or, Uplands Cheese wanted to make an Autumn seasonal cheese that reflected the region's terroir. They tailored the Mont d'Or process to their own milk supply and ripening environments and have created a soft, raw cow's milk cheese made with evening milk. The washed-rind is wrapped in a thin strip of spruce bark then aged for sixty days. The paste is luscious and silky and easily eaten with a spoon. Clare & Matt Stoner Fehsenfeld, of the Madison, Wisconsin-based jame company Quince & Apple, steep dried Mission figs in a blend of black Indonesian tea with just a touch of sugar. The result is the perfect blend of natural "figgy-ness" and gently spicy notes of tea. When paired with Rush Creek, these fruit and leaf flavors round out the buttery unctuous character of this young cheese. We're sure you'll love it as much as we do.
